Journaling turns the page for Morthern Spears

When Morthern Spears of Northern NSW experienced her world crumble after a relationship breakup and the prospect of bankruptcy, she looked within to find that for which she was grateful.

“I had reached a stage of complete overwhelm where I was consumed by fear, anxiety and stress,” Morthern said.

“Rather than using my mind to somehow take control, I started practising gratitude through journaling and being present.

“This hour or so I spent each day was like being in a shelter during a cyclone.

“I don’t call it meditation, as I was sitting in the middle of reality, but while I had full acceptance of reality, I went into a timeless zone.”

As it turned out, the very space she created around herself was to set her free.

“I carried my journal and my diary with me everywhere I went, then one day I expressed my frustration at how cumbersome it was that the two weren’t in one book,” Morthern said.

“That’s where the idea of the Gratitude Diary was born.

“At the time I was so broke, I had nothing to lose.”

Filled with beautiful photographic images and quotes from both history’s great thinkers and three-year-old “little sisters”, Morthern’s Gratitude Diary provides space and inspiration for the reader to write five things each day for which they are grateful, while also planning other aspects of their day.

Each year the diary is themed around a particular journey. As 2011’s front cover featuring two dragonflies mating suggests, this year’s theme is relationships.

“It’s about opening yourself up to all relationships, whether they are as a friend, lover, child or parent, but from an adult perspective,” Morthern said.

As a singer-songwriter, Morthern had never had aspirations to write or publish a story, but has found it an amazing way to share her process with her readers.

“Even though I’ve written articles that have been published, I never saw myself as a writer, but I do like to tell the truth and I do like to share,” Morthern said.

“The diary is an authentic reflection of my own soul and personal journey.

“It’s a way to share my own process and considering the spiritual concept that we’re all ‘connected’ in some way, others can relate to my process as the ir own.”

During her first year of independent publishing, Morthern printed 1,000 copies and sold the lot.

Now in its fourth year, Morthern’s Gratitude Diary pays the mortgage for her home in South Golden Beach and gives her freedom to write songs and travel. As a testament to the diary’s success, Morthern is making inroads both in the New Zealand and American markets.

“Funnily enough, this was never an achievement-based process,” Morthern said.

“The diary has its own momentum and as it expands, I’ll continue to meet its needs.”

The Gratitude Diary is available for purchase through bookstores or online.

Christmas Cassata - a delectable dessert for a summer event!

This is a really lovely dessert!

Decadent!

Refreshing!

And very unique!

Chocolate Coffee Sauce

400g Nestle Sweetened condensed milk
30g butter
1 tablesp Golden Syrup
150g Plaistowe cooking chocolate broken into squares
2 tablesp coffee dissolved in 1/4 cup of hot water

Other ingredients:

Glace fruit (jelly lollies can be substituted)
Raisins
Brandy
Plain vanilla icecream (about 4 litres)

Cassata

Sauce: Place Nestle condensed milk, butter and syrup in a small saucepan. Stir constantly over medium heat until golden (8-10 minutes). Remove from heat, add cooking chocolate and coffee and stir until smooth. Cool.

Combine glace fruit, raisins and brandy (to taste) in a small bowl and allow to stand for 2-3 hours. Alternatively cover with plastic wrap and microwave for 4-6 minutes on defrost. Cool.

Remove icecream from freezer and allow to slightly soften. Fold fruit and extra cooking chocolate into the ice cream. Swirl through half the chocolate-coffee sauce. Spoon into a lightly greased 2 litre pudding bowl or 2 x 1 litre pudding bowls. Cover and freeze overnight.

Turn onto serving plate and serve with remaining warmed chocolate-coffee sauce.

Tip: Allow Cassata to stand 5-10 minutes at room temp before serving.

Rum Balls... or peppermint... yum yum yum!

Quick and simple!

And they make great presents!

10 Weetbix
1 tin condensed milk
2 tablesps coconut
1 tablesp cocoa
Vanilla, rum or peppermint (depending on your desired flavour, or create a mix of flavours!)

Mix above ingredients in a blender and leave to stand for ten minutets. Roll into balls and coat in coconut. Refrigerate!

READER TIP: Substitute rum/flavouring for chocolate bars you can crush up - cherry ripe, peppermint crisp etc. Prepare ahead of time and freeze!

White Chocolate Apricot Liqueur Truffles

WHITE TRUFFLES

White chocolate is very sweet, but adding nuts and dried apricots will give freshness to the truffle mixture. As the truffles have cream in the mixture, they need to be refrigerated.

12 Dried apricot halves

3 tablesps of brandy or orange liqueur

250g white chocolate, cut into small pieces

4 tablesps of cream

155g blanched almonds

Cut the apricot halves into tiny pieces and place in a bowl. Cover with the brandy or liqueur, stir and leave for 30 minutes.

Melt the chocolate in a basin placed over a saucepan of simmering water and stir. When the chocolate has softened, mix in the cream, apricots and any brandy or liqueur remaining. Transfer to the refrigerator until firm enough to handle.

Meanwhile, put the almonds onto a tray and bake in a moderate oven, 180 c until a deep golden brown.

Roll into balls and coat in almonds/and or coconut. Keep refrigerated!

*When including nuts in your recipes, remember to add a tag to your gifts so others are aware of the nut content. Yes we can create tags like this for you! Contact us for details!

My favourite GINGERBREAD recipe ... and Tiger Butter... YUM!!!!

This is a traditional recipe in my home each Christmas!

GINGERBREAD

125g butter or margarine

1/3 cup brown sugar

1/3 cup golden syrup

3 cups plain flour

1 egg

1 tspn ground ginger

1 tspn cinnamon

1 tspn ground cloves

2 tspn bicarb soda

Icing sugar for decoration

Prehead oven to 180 deg celcius

Cream butter, sugar, golden syrup

until light and creamy. add egg.

Sift flour, spices, bicarb soda and

add to creamed mixture.

Roll dough until 5 mm thick and

cut into shapes using assorted

Christmas cutters.

Place on greased trays and bake

for approximately ten minutes.

Cool and decorate with icing sugar.

TIGER BUTTER

Another favourite...

1 x 375 g packet of Dark Melts

1 x 375 g packed of White Melts

1/2 cup smooth Peanut Butter

1. Grease a slice tray (19 x 29 cm), line base and two long sides with baking paper, extending paper 5 cm above the edges of pan.

2. Place chocolates in separate heatproof bowls. Place one bowl at a time over a pan of simmering water, stir until chocolate is melted.

3. Stir peanut butter into white chocolate; mix well. Add dark chocolate, gently stir to create marbled pattern. Pour into prepared pan. Stand at room temperature until set.

4. To serve cut into small squares. Store in refrigerator.

Chocolate Peanut Butter Truffles... to die for!

This is a huge hit with all of those peanut butter lovers!

To display place in glass or plastic bottles/jars

or give them away in noodle boxes or other

funky bags and boxes dressed up with

tissue paper in Christmas colours!

INGREDIENTS

50 g Butter

1/2 Cup Smooth Peanut Butter

1 Cup Icing Sugar

80 g Peanut Brittle (preferred brand Darrell Lea)

1 1/2 cups Coco Pops

250 g Choc Melts

25 g Copha

METHOD

Crush Peanut Brittle with hammer or rolling pin first.

Heat Butter and peanut Butter until well combined (usually in a saucepan over a low heat).

Transfer to a large bowl.

Stir in icing sugar, peanut brittle and Coco Pops.

Mix well.

Roll into balls and refrigerate.

Combine Choc Melts and Copha - melt together.

Dip balls and reset.

Use dark and milk chocolate for a fun mix!

You can also coat in coconut, icing sugar, crushed nuts or drizzle with white chocolate and add a little bit of green and red jelly lolly to resemble a christmas pudding with cherries and leaves.

Always tag your products if you are giving them away and remember to ensure your label states that the product contains nuts, for those who might be allergic!

No Flour... Chocolate ROULADE recipe ... for Christmas!

This is one of my favourite Christmas recipes!

DECADENT CHOCOLATE ROULADE

(NO FLOUR!)

Serves 6 – 8

Preparation (15 mins plus cooling and 30 minutes chilling)

Cooking: 15 mins

This flourless cake is rich but surprisingly light. This also means it cracks slightly when rolled – but that’s proof it’s flourless! As a bonus it is suitable for those on gluten-free diets. The roulade can be made a day ahead and rolled six hours before serving. Keep it covered with plastic wrap in the fridge.

INGREDIENTS:

200 g Dark Chocolate, chopped

¼ cup (60 ml) water

1 teaspoon dry instant coffee

4 eggs, separated

½ cup (110g caster sugar)

1 tablespoon of caster sugar (extra)

1 cup (250 ml) thickened cream

150 g of raspberries (or strawberries, blueberries or whatever you prefer).

Step 1.

Pre-heat the oven to moderate (180 deg C). Grease and line the base of a 25 cm x 30 cm swiss roll pan. Stir chocolate, water and coffee in a medium heatproof bowl over a pan of simmering water until chocolate is melted.

Beat the egg yolks and sugar in a small bowl with an electric mixer for about 5 minutes or until thick and creamy. Stir the egg mixture into the chocolate mixture.

Step 2.

Beat teh egg whites in a clean small bowl with an electric mixer until soft peaks form. Gently fold the egg white, in two batches, into the chocolate mixture. Spread the mixture into the prepared pan and bake in pre-heated oven for about ten minutes or until the top is firm to touch.

Meanwhile place a large sheet of baking paper on a wire rack and sprinkle the baking paper with the extra caster sugar.

Step 3.

Turn the cake out onto the prepared baking paper, remove the pan’s lining paper and stand the cake, upside down, until it is cold.

Step 4.

B eat the cream in a small bowl with an electric mixer until firm peaks form. Spread the cream over the cake then sprinkle evenly with fruit. Roll up roulade from the long side using the paper to lift and guide the roll. Refrigerate roulade for at least 30 minutes before serving.

Suitable to freeze.

Chocolate mixture suitable to microwave.

*Hint

If roulade is cracked or badly shaped, refrigerate it for a few hours or until it is firm, then gently press the sides of the roll into a round shape. It can also be wrapped firmly in plastic wrap to keep its shape.

Just far too yummy to keep to myself!

We have received a beautiful pink bag to review at Creation Cottage and it's such a stunning colour. Perfect for little girls! However, it's really hard to choose because we love all of the colours! A gorgeous array of rainbow colours to brighten up any room, this user friendly space saver is a beautiful addition to any room, and will save you so much time and energy! Get the kids involved! They'll find it so easy to pick up their toys using these handy drawstring bags and they'll want to do it because it's so simple and fun to do! The Because I am a Girl campaign is based on a series of reports by Plan International that show progress towards achieving the Millennium Development Goals – the goals set by the world’s governments in 2000 to halve world poverty by 2015 – is being hampered by a continued lack of investment in girls.

The 2009 Because I am a Girl report – the third in the series – focused on girls and economics, and how the global financial crisis is having a devastating and ongoing effect on millions of girls who are already enduring the worst effects of poverty compounded by discrimination.

But the report also argued that investing in girls is one of the best ways to end poverty and create global prosperity – an investment that is currently blocked in many countries by persistent attitudes that girls are not as important as boys.

Investing in girls has a powerful effect on a family’s and community’s experience of poverty. For example, a girl who has received adequate education will grow into a woman who will have fewer children that are more likely to be healthy, well educated and break out of the cycle of poverty.

Investment in girls is important for three reasons:

• Girls in the developing world face unique obstacles and barriers. For example, they are more likely to suffer from malnutrition, die before the age of five and be forced to get married as a teenager than boys.

• Girls who get the right opportunities are more likely to pass on the benefits to their family and community, for example:

o Women will reinvest 90 per cent of their income back into the household, whereas men reinvest 30-40 per cent.

o Children of a woman who has completed primary school are less likely to die before the age of five than children of mothers who have no schooling.

• Investment in girls can improve a country's economy. Statistics show that an increase in the number of girls in secondary education boosts a country's wealth because many will enter the work force as wage earners who then have more money to spend.

Investing in girls in developing countries is not only right for girls, it will mean a better quality of life for their communities for generations to come

In simple terms, the reports and campaign argue that increasing our efforts to ensure greater and fairer investment in girls makes sense because it’s:

• Good for girls, who are the most disadvantaged on a global scale.

• Good for helping to break intergenerational cycles of poverty, with a positive impact for girls and boys.

• Good for economies, growth and global prosperity.

The next Because I am a Girl report, to be released in September 2010, will focus on the opportunities and dangers of two rapidly changing areas of life that are having a huge impact on girls’ development: information technology and the world’s growing cities.

In both these areas, adolescent girls face bewildering and often conflicting sets of choices as they go about their lives; choices that will affect their own futures, but also the future of the world.

The report will show that in both these areas, the right of girls to be protected is frequently violated, and the dangers for girls in both cities and online are rapidly expanding and yet little regulated or researched. As a result, they pose massive new threats to girls’ safety.

However, the report will also examine how cities and ICTs have the potential to offer girls more opportunities than ever before.

We ignore the dangers facing adolescent girls at our peril. Girls are half the world‘s future; the citizens who will be running our cities and shaping technology in the decades to come. We owe it to them to ease their passage from childhood into womanhood so that they have the skills and the knowledge to build a better and safer future for us all. We owe it to ourselves and to the future of our world to listen to what they have to say.

OUR REVIEW

Wow, wow and wow! I am really wondering why I never owned a slow cooker before! I am addicted...and I'm not sure I'll cook any other way again. I want two of them they're so good... Why two? ... here's the scoop...

On Saturday night we created a positively fabulous stew in the slow cooker. I am not a stew fan... long story, but it's really not my favourite meal. I think I've been converted to love them though! The meat was so tender and perfect I even had left-overs for lunch the next day!

On Sunday we did the most perfect roast - now this is my favourite meal. We even did potatoes in it, which turned out very tender. I have to say it was truly divine! You barely even need to cut the meat. Sensational!

On Monday night I did apricot chicken for some of us, and here's why I wishing I had two of them, because I also did satay chicken and ended up doing that the general way - in a frypan! Sigh! Boring!!!

Tonight I am doing a piece of Silverside... see what I mean? I can't keep my hands off it! This is the perfect addition to any kitchen, for any size family, but I am especially loving it because it means I can set and forget - my favourite thing to do! I hate cooking dinner; it is seriously my least favourite job. The preparation, the time it takes, and the fact that sometimes I am running out the door right when dinner is due to be prepared. This really takes the shine of my attitude and seriously makes it harder to be bothered. It also means we end up grabbing something quick, which I hate!

Now I just pop what I'm cooking into the multicooker, set it for a few hours time, and hey presto...dinner! With very little effort at all. How good is that? With my large family this is most definitely, without doubt, the best way to go for quick or slow preparation because I can leave it on and go out and come home to a perfect meal.

I love that this is a 5 in 1 Multicooker - love the rice function! I do a lot of rice dishes so it's fantastic to have. I love the look of this product, it is very sleek and is a lovely accent to my workspace in the kitchen.

This would make a fabulous wedding gift, housewarming present, awesome gift for a new mum to save her hours and hours of standing at the stovetop, or perfect for Nanna to save her legs. It is the best invention for today's busy family. It will save you time, effort and agony and expose you to a whole new way of cooking as well as freeing up your time to do the things you love! And whether you love or hate cooking, the New Wave Multicooker will become your new best friend. It certainly has become mine!

I was delighted to be contacted recently by Buyster to trial some of their amazing products - one of them being their fantastic roasting pan! This was very timely indeed as I had been considering purchasing a new one.

A good roasting pan cannot be underestimated and my dishes need to stand the test of time. Not only do I use them a lot, but I have a large family to cook for and I need reliable items in the kitchen that will not only last, but are also easy to clean!

When the dish arrived and I opened the packaging it looked like it would weigh a tonne. I'm excited to say this product is light-weight but is really synonymous with quality! I loved that it was very well made and cooked evenly. I loaded the dish with vegetables and they cooked quickly and perfectly. I love that it comes with a glass lid.

Cooking a roast the night before we were due to go away on a Hunter Valley Road Trip (travelling over 1700 km in one long weekend) might not have been the best idea, but the dish was a dream to clean. The surface coating makes it quick and easy to deal with and for someone who doesn't have a lot of time, the effort required to get dishes perfect after cooking a roast can be time-consuming and frustrating. At Creation Cottage we've recently had the pleasure of trialling Melinda's Gluten Free Range! You may know 'Melinda' from your gluten-free shelf in the supermarket!

You can also find 'Melinda' via her website.

Today we're profiling 'Melinda's beautiful Cafe-style Sweet Caramel Cakes - oh my gosh! Do I feel like I have died and gone to heaven! Melinda has put taste back in my dietary requirement muffins and cakes...and food in general! 'Melinda's' Gluten-free products are literally...to die for!

We made these for a dinner party and nobody had any idea they were gluten-free; because gluten-free doesn't have to mean taste-free as well, anymore! Thank goodness! However... I must confess... I've become addicted to these!

The Great Aussie Roadtrip...what's it all about?

Have you ever just wanted to get away from it all? Disappear? Fall off the map for awhile... Leave behind reality, jobs, bills, the exhaustive routine of every day life? I know I have... and I'm even considering doing it!

I've wanted to travel Australia for a very long time...since...forever actually! I figured it was something I'd do when I've retired... but I hate that word, it kind of suggests my productivity is over (which I can't imagine it ever being over and I just don't want it to be!) ... so I've decided this CAN BE DONE...NOW... even with 7 children in tow and a chorus of 'Are we there yet!' Oh boy! Ask me later what was I thinking...

What I'm thinking right now... is that like the Power Family - of 'The Great Aussie Road Trip' - it will be the adventure of a lifetime! I want to get off the crazy roundabout we're currently on and do something different! I want to experience Australia... well, differently to what I have in the past...

Actually ... this blog post started out a lot different to what I intended... I digress. Let me go back a step!

So... back to the story at hand. I recently saw details of 'The Great Aussie Road Trip' and I was inspired to not only get involved BUT to also plan my own trip! Which will be known as THE GCGHOV Road Adventure - with our 7 little Australians! Okay ... not all of them are so little... aged from 16 down to 3! We are about to 'plan' the journey... so bear with me... I am still working out the logistics of travelling seriously with so many people on board... Oh boy! I think it's going to be interesting to say the least... I do have loads of camping items at the ready, but there's still a lot to think about.

In my journeys so far, I have been to New Zealand, Fiji, Noumea, Vila, Canada, America ... and within Australia - Sydney, Adelaide, Perth, Melbourne, Townsville, The Hunter Valley, Byron Bay, Gladstone, Rockhampton, Toowoomba, Dubbo, Deniliquin and loads of other country towns, like Warwick etc. (I took a bus to Melbourne once, and I've driven to Adelaide). I've done the usual Gold and Sunshine Coasts, I've seen Tangalooma. I guess the list is endless if I really thought about it. Despite having lots of children, I've been blessed to have travelled a lot.

But, although I've done some major roadtrips before, this will be the mother of all roadtrips to tackle.

For us...it's about spending quality time together as a family... life is too short not to! It's about getting out in the world and experiencing life to the full. I can't wait to blog it and take mountains of photographs (that's my dream - to go crazy with my camera) - as you already know I am an avid photographer, with many of my pictures available for veiwing on The House of Vintner Blog.

We just love Mumentum Organisers! From the Family Organiser, to the Health and Well-Being Journal, to the Expectant Mother's & New Mother's Journals, I have found the holy grail of organisers. We just know you'll love them too!

Firstly I love the size. I love the soft bound covers. I love that they fit neatly into my handbag, any handbag, that I am carrying. I love that they cater to all aspects of my life...and yours!

At Creation Cottage we recently had the pleasure of trialling Aden & Anais Muslin Baby Wraps.

In gorgeous colours and designs, aden + anais are a gentle muslin wrap created especially for that precious little bundle of joy in your life! A quality product that is stylish, and generous in size, muslin wraps are a must have for your baby!

When I had my first baby nearly 22 years ago, hand-crocheted blankets, flannelette and straight cotton were the fabrics of the day. Later on I had waffle blankets, blankets with fringes, and of course we still had flannelette and cotton as well as my favoured polar fleece... then came Muslin!

I wondered what all this muslin hype was about. It's not a new fabric. My grandmother, born in 1912, used to speak of muslin. But I was not that familiar with it, or its uses. I really noticed it about 6 years ago and I kept meaning to try it! My first experience with a muslin wrap of my own was aden + anais.

Muslin is a wonderful product for babies. Swaddling them is easy in the generous fabric, it breathes, it is cool, and it also traps in the warmth, meaning it can be used all year round. Muslin is a light cotton fabric and it was first imported from the Middle East to Europe in the 17th Century.

Muslin has other uses as well. As a wine lover I was interested to note that it can be used to filter wine of impurities during the decanting process. A funnel with muslin stretched over the narrow end may be used to transfer wine or port into a decanter, keeping any sediment out. This pizza was not for me. But if your allergy isn't as bad as mine, you may be able to tolerate them better! If you love Eagle Boys (and I do!) you'll love this alternative!

Firstly the fabric is so bright and funky - so different to anything else on the market that I've seen, and as a mum of 9, I've gone through a lot of bibs over the years.

I love the make. And the size. High quality - made by mums for mums! Durable, eye-catching, easy to use, launder and I imagine, long-wearing. I just received mine last week but I look forward to experiencing their longevity! Especially love that they won't go mouldy!

Kylie from Wriggly Worm sent us a beautiful personalised Dummy Chain to review and I have to say it is one of my most favourite products to date! The quality is not only fabulous but it is very cute and and an also double for attaching a favourite toy (not a heavy one) to your child's clothes!
My son takes this chain everywhere, even without anything attached to it! He was thrilled it had his name on it! The colours are bright, the product is versatile, well-made and practical! I am rating this product 10/10. I was surprised that it is a much better product than the dummy chains currently available in department stores which can look a little flimsy and fairly plain!

How The Marysville Cookbook came about...

Heather says:-

Saturday 7th February 2009, now known as Black Saturday, saw the state of Victoria devastated by uncontrollable bushfires. Many towns were wiped from the map, thousands of buildings were lost and 173 people perished.

The devastation of Marysville was almost total.

The township needed something that was theirs and theirs alone. So I created the “Cookbook for Marysville”. Almost 300 copies were printed and given to the residents of Marysville with a message of hope and of thanks to emergency personnel.

Many people wanted to buy the book. I commissioned a second print run and the book is now for sale at $30.00.

My recipe book is simple, it was created for the residents of Marysville, simple recipes, with simple ingredients, refer to the back of book (index) and see the major ingredients listed.

This book was created by me for the residents of Marysville, which is where I grew up. This is the 2nd run of the book and now for sale, $10 from each sale is being given back to the town.

OUR REVIEW

This is a beautiful cook book that is as much a pictorial record of Marysville as it is a recipe book. Adorned with photographs of the historic township's landmarks and scenery, this book truly is a message of hope - a blessing!

I was drawn to the heartwarming pictures, as much as I was to the heartwarming ingredients. Touched by the method behind the book, it compelled me to read more. It is difficult to reconcile the destruction of this beautiful town, so many lives lost, the result of this devastating fire.
